We Are Shaped By What We Eat
<p>As omnivores, humans enjoy a dietary diversity that has undoubtedly been a significant factor in our evolutionary journey. From the juicy sweetness of fruits to the robust flavors of meats and the earthy taste of tubers, our diets are a cornucopia of flavors and nutrients.</p>
<p>Consider onions, for example. These flavorful bulbs add depth to many dishes, yet they are toxic to dogs. Why can we safely consume onions when dogs cannot? The answer lies in our evolutionary past. Our omnivorous ancestors regularly consumed tubers and bulbs, which often contained certain toxins. Over generations, through the process of random mutations, we developed genetic tolerances and biological pathways to process and eliminate these toxins. Dogs, being carnivores, didn’t face such dietary challenges and thus didn’t develop similar defenses.</p>
