I say as much to my buddy as we head from his place in Tlalpan to Col de Valle Centro at around 8:30 on a slightly drizzly, mid-July Sunday morning in central Mexico City. While in transit, my friend Mark — a professor of evolutionary biology, multi-year resident of Mexico City, and devoted enthusiast of hyper-local cuisine — keeps insisting that the place to which we’re headed, Fonda Margarita, is the real deal. This is going to be a deep, authentically central CDMX breakfast ritual that I absolutely have to experience.
