<p>Over the years, some of the best stories revealed themselves to me in the gap between the last bite of a meal and the departure from the dining table. Perhaps it’s digestion giving our guards a break or maybe it’s the attempt to delay the inevitable tragedy of a meal coming to an end.</p>
<p>One day in 2019, we had just finished my mother in law’s iconic fattet batenjen. I lingered at the table because I wanted to give myself some time to think about the opportunity cost of a third serving of the fatteh, and whether the serving would jeopardize space for dessert. As I quietly conducted my analysis, I forced my hosts to stay with me. Thankfully, our culture recommends that the guest decides when the meal ends.</p>
