<p>The large turkey had been in the refrigerator for over 20 hours. It was soaking in a bath of olive oil, cayenne pepper, garlic, jalapeno peppers, citrus juices, and crushed, fresh herbs from the local farmer&rsquo;s market.</p> <h2>As I inhaled the rich marinade, a thought struck me hard.
